What can you make with coconut filling (inti kelapa) ?

Making coconut filling / Inti Kelapa is very easy. All you need is grated coconut, water, and sugar. Some examples of foods you can make with Inti kelapa are dadar gulung (Indonesian Sweet Coconut Pancake), lepat bugis (Glutinous rice cake wrapped in banana leaf) and simple coconut filled bread, among others. You can find most of these traditional sweets in an Indonesia wet market or street stall.

Substitution

Sugar: In this recipe, I used granulated sugar, but you can substitute that with palm sugar. Most Indonesian traditional cakes use palm sugar but I to use granulated sugar when I make coconut filled bread. The only reason is that I prefer the taste!

Tips

  • If using for bread filling or other toppings, make sure to let it cool to room temperature.
  • Make sure when stirring the grated coconut and the sugar syrup that you pay attention to the heat on the stove. If it’s too hot, your sugar might turn into caramel.

Easy 15 minutes coconut filling recipe perfect for bread.

Ingredients

  • 400 grams / 14 oz grated coconut

  • 1/2 cup water

  • 1 cup granulated sugar

  • 1/2 tsp salt

  • 1 tsp vanilla extract (optional)

Directions

  • To make sugar syrup, pour water and sugar in a pan and set heat to medium – low.
  • Once the water starts to bubble, pour the grated coconut and salt. Stir until it’s combined.
  • Add the vanilla extract.
  • Turn the stove to low heat and keep stirring the grated coconut until the sugar syrup has evaporated.
  • Transfer to a bowl and let it cool. It’s ready to be served!
