Pan-Fry Butter Shrimp

What is Udang Mentega?

Udang Mentega is Indonesian for butter shrimp. This is a recreation of the shrimp from a famous restaurant in my home town, the Rezeki Seafood Restaurant. That being said, I would hesitate to call this an Indonesian recipe, and would says its more Asian fusion. I added my own twist with the addition of crushed corn flakes for extra crunch. A big difference in taste compared to American style butter shrimp comes from the addition of oyster sauce.

Tips

  • For a more traditional Indonesian style of butter shrimp, you can omit to add the corn flakes.
  • You can play around with the ratio of oyster sauce, ketchup, and sweet soy sauce to suit your taste. I would recommend constantly checking the taste of your shrimp as you cook. If you’d like more saltiness, add more oyster sauce. If you’d like it to be sweeter, add sweet soy sauce or sugar. The sauce will be darker if you add more sweet soy sauce.
  • The top two Indonesian sweet soy sauce brands are Bango Sweet Soy Sauce and ABC Sweet Soy Sauce. Personally, I prefer the Bango because it is sweeter than the ABC brand.
