What is Udang Mentega?
Udang Mentega is Indonesian for butter shrimp. This is a recreation of the shrimp from a famous restaurant in my home town, the Rezeki Seafood Restaurant. That being said, I would hesitate to call this an Indonesian recipe, and would says its more Asian fusion. I added my own twist with the addition of crushed corn flakes for extra crunch. A big difference in taste compared to American style butter shrimp comes from the addition of oyster sauce.
Warning this is not a health food recipe! Please eat in moderation 😊.
Tips
- For a more traditional Indonesian style of butter shrimp, you can omit to add the corn flakes.
- You can play around with the ratio of oyster sauce, ketchup, and sweet soy sauce to suit your taste. I would recommend constantly checking the taste of your shrimp as you cook. If you’d like more saltiness, add more oyster sauce. If you’d like it to be sweeter, add sweet soy sauce or sugar. The sauce will be darker if you add more sweet soy sauce.
- The top two Indonesian sweet soy sauce brands are Bango Sweet Soy Sauce and ABC Sweet Soy Sauce. Personally, I prefer the Bango because it is sweeter than the ABC brand.

Ingredients
1.2 lb of shrimp
6 tbsp of butter
3 tbsp ketchup
2 tbsp oyster sauce
2 tbsp sweet soy sauce
2 tbsp of sugar (optional)
1/2 onion, julienne
3 – 4 cloves of garlic, minced
2 1/2 cups of corn flakes, crushed
Scallion for garnish
Directions
- Melt 4 tbsp of butter in a large skillet over medium-high heat.
- Add shrimp and stir occasionally until they curl and turn pink. It should take only 2 – 3 minutes. Set aside.
- In a different skillet, add the remaining butter and onions. Cook for 3 – 5 minutes until golden.
- Add ketchup, oyster sauce, sweet soy sauce, and sugar (optional) into the skillet. Add shrimp and gently stir until mixed well.
- Clear a little spot in the middle of the pan and add garlic, let it cook for a few seconds before stirring it in.
- Once everything is combined well, add the crushed corn flakes. Garnish with scallions if desired.
