What is a Madeleine?

Madeleine is a distinctive shell shaped sponge cake originating from northeastern France. Traditionally it was flavored with vanilla and lemon zest but nowadays you can find different Madeleine flavors like chocolate, ginger bread, earl grey, etc. Today, I will be making Matcha Madeleines. Make sure to use highest quality matcha possible. High quality matcha will taste very smooth and sweet at the same time.

Delicious madeleines with a matcha twist.

Ingredients

  • 2 room temperature eggs

  • 1 cup all purpose flour

  • 1 tbsp matcha powder

  • 1/2 cup sugar

  • 1/2 cup butter, melted and cooled to room temperature

  • 1 tbsp milk

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1/4 tsp salt

Directions

  • In a bowl, sift flour, matcha powder, baking powder, and salt together. Set aside.
  • In a stand mixer, beat eggs and sugar until fluffy at medium – high speed. Once the batter turns pale yellow and fluffy, add vanilla extract and milk. Mix until combined.
  • Slowly add the dry ingredients into the batter. Mix until incorporated. Once the batter is incorporated, add the butter. Fold until combined.
  • Let the batter rest in the fridge for 1 hour or overnight.
  • Preheat oven to 350° F
  • Generously coat the Madeleine pan with melted butter and sprinkle it with flour. Shake off the excess flour by taping the pan.
  • Scoop a tablespoon of the batter into the Madeleine pan.
  • Bake for 12-14 minutes.
  • Let the finished pastry cool to room temperature before serving.
