Key lime pie is an American dessert pie made with a graham cracker crust, with a filling that consists of key lime juice, sweetened condensed milk and egg yolks. It can be served with whipped cream topping or meringue topping. The dish is named after the small key limes that you can find along the Florida Keys which are more aromatic than the other limes. For those who lives in Indonesia, key limes are called jeruk nipis, they should be quite easy to get. My parents actually used to have a key lime tree in their yard. However, I did not get to try key lime pie until I came to the US. Now, key lime pie is my favorite pie of all time!
Substitution
If you are not able to find actual key limes, you can find bottled key lime juice on Amazon or your local grocery store. The brand that I like is the Nellie & Joe Key West Lime Juice. However, freshly squeezed juice results in a much better pie.
Tips
- I personally like a more sour/tart key lime, but if you like a sweeter pie, you can reduce your key lime juice to 1/2 a cup. If you do this your filling will be a little less than what I have shown. More room for whipped cream! If you like it even sweeter, increase it to 1 cup of key lime juice but use 2 14 oz cans of sweetened condensed milk.
- In this recipe, I use whipped cream as my topping. You can also use meringue topping.

Ingredients
- Graham Cracker Crust
10 – 12 full sheet graham cracker
5 tbsp unsalted butter, melted
1 tbsp brown sugar
1/4 tsp salt
- Filling
3/4 cup key lime juice
14 oz sweetened condensed milk
5 egg yolks
- Whipped Cream
1 cup heavy whipping cream
4 tbsp confectioner sugar
1/2 tsp vanilla extract
(optional) 1 tbsp dried whole milk powder
Directions
- Graham Cracker Crust
- In a food processor, pulse graham crackers until they become crumbs. Add sugar, melted butter and salt. Pulse until combined. Transfer the mixture into a 9-inch pie dish. Spread and press the graham crackers mixture into the bottom and side of the dish pan. Pre bake the crust at 350 F for 7 – 8 minutes.
- Key Lime Filling
- Whisk together egg yolks, condensed milk and key lime juice in a bowl. Pour the mixture into the pre-bake crust.
- Bake the pie for 20 – 25 minutes at 350 F or until it’s slightly jiggly in the middle. Let it cool at room temperature. If you are not ready to serve the pie, you can cover and put it in refrigerator for up to 3 days.
- Homemade Whipped Cream
- Whip the heavy cream, sugar, vanilla extract, and optionally dried whole milk powder together at medium high speed until a medium peak forms, approximately 3 – 4 minutes.
- Spread or pipe your whipped cream on top of the key lime pie. Sprinkle some key lime zest if desired.
