What is Ube?
Ube is a purple yam originally from the Philippines. It is characterized by its deep purple color, however you can find lavender color ube. This happens when the Ube is starchier. People often mistake Ube for purple sweet potato. Ube has a bark-like dark brown appearance while purple sweet potato has purple skin. Ube flesh is slimier as well because of its high starch content. Taste-wise, Ube has a very mellow taste compared to a purple sweet potato which has a mildly sweet wine-like taste.
Substitution
Ube: Powdered ube or frozen grated ube can be substituted for fresh ube. You can find frozen grated ube at your local Asian store. Just make sure to steam it for 8 – 10 minutes before using. Purple sweet potatoes can be used as well if you are not able to find any of the substitutes listed above.
Ube extract: If you can not find Ube extract, you can substitute it with purple food coloring.

Purple Yam (Ube) Crinkle Cookies

Ingredients
1/2 cup mashed ube
8 tbsp butter, room temperature
2 large eggs, room temperature
1/2 cup sugar
1/4 tsp ube extract (optional)
1 1/2 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
Confectioners sugar for coating
Directions
- Mashed Ube /Purple sweet potato
- Wash the outer skin. Peel the bark like outer skin of the Ube. Ube is very slimy, be careful when peeling.
- Boil or steam for about 25 – 30 minutes. If using sweet purple potato, boil it or steam it for about 20 minutes.
- Drain the water and mash the ube / purple sweet potatoes using a potato masher or food processor. Set aside.
- Crinkle Cookie Dough
- In a small mixing bowl, combine flour, baking powder, sugar, and salt. Mix until combined and set aside.
- In a stand mixer, cream the butter and sugar until it reaches a fluffy light yellow color. Add eggs and mix until combined. Once it is combined, you can add the mashed ube, and ube extract (optional). Beat again until incorporated.
- Gradually add flour into the mixture and beat. Beat until just combined, do not over mix. Refrigerate the dough for at least 4 hours or overnight. The dough will be very wet, refrigerating it allows it to be shaped.
- Preheat the oven to 350° F
- Scoop 1 tbsp of the cookie dough and shape it into a ball. Place it into the cookie sheet.
- Roll each of the balls into powdered sugar. Make sure that all the ball is fully coated. Don’t be afraid to roll it on generously. For a cracked sugar appearance, apply a few coats of sugar. The cookie will absorb some of the sugar in the oven.
- Bake for 10 – 12 minutes. Let the cookie cool down for a minute or two before transferring to a cooling rack.ouldn’t
