What is a Buckeye?

Buckeyes are a confection made with peanut butter, powdered sugar and partially dipped in melted chocolate. The name comes from their resemblance to the nut of the state tree of Ohio — the Buckeye Tree. This treat is well known in Ohio and its neighboring states.

Tips

  • Melt 1 tablespoon of butter with your preferred chocolate, this helps the chocolate melt smoothly. 
  • Melt the chocolate using the double boiler method, it gives you the best control over the heat.

Perfectly sweet and easy to make peanut butter balls dipped into melted dark chocolate. Yields 30 peanut butter balls.

Ingredients

  • 1 cup smooth peanut butter

  • 5 tbsp unsalted butter, softened

  • 1 1/2 cup confectionary sugar

  • 1 tsp vanilla extract

  • 1 1/2 cup dark chocolate

Directions

  • Cream peanut butter, vanilla extract and softened butter in a mixer.
  • Add confectionary sugar and mix on low speed until combined. Scrape down the bowl if necessary.
  • Using a 2 tsp cookie scoop, scoop the peanut butter mixture and roll into balls.
  • Transfer peanut butter balls onto baking sheet and chill until firm or for at least 30 minutes.
  • If using a double boiler method, fill medium pot less than halfway with water and bring to a simmer. Then, place a heatproof bowl big enough to sit on top of the pot. Add the chocolate and butter (optional) to the bowl. Use low heat and keep stirring the chocolate until smooth.
  • Use a toothpick to dip the peanut butter balls into the melted chocolate. DO NOT dip the peanut butter balls entirely, leave a bit of peanut butter exposed for the signature buckeye nut look.
  • Chill to allow chocolate to firm up. Voila! It’s ready to be served and enjoy.
