It is characterized by its deep purple color, however you can find lavender color ube. This happens when the Ube is starchier. People often mistake Ube for purple sweet potato. Ube has a bark-like dark brown appearance while purple sweet potato has purple skin. Ube flesh is slimier as well because of its high starch content. You can find frozen grated ube at your local Asian store. Just make sure to steam it for 8 &#8211; 10 minutes before using.
